The BEST Mother's Day ...

... because it was eternal!

 This little man decided he wanted to be baptized last night. So we checked with Pastor Barry. Who said the baptismal would be cold but we could do it this morning.

 And it was cold. Barry's first step into the water.

Some heckling from Monica (who heckles at a baptism?) and she splashed him.

Cilantro Potato Salad


This is my "Go-To" recipe for pot-lucks and get togethers. It is pretty, yummy, and different. Rachel Ray published it.. I devour it :)

Ingredients:
2 1/2lbs russet potatoes (peeled and cubed)
1 small red onion, finely chopped
1 clove garlic, chopped
1/3 cup mayo
1/2 cup fresh cilantro
2 tablespoons red wine vinegar
3 celery ribs, finely chopped
1 red pepper
1 orange pepper

Directions:
Place potatoes in pot and cover with water. Place over high heat and bring up to a boil, add salt, and simmer 10-12 mins. Cool Potatoes

Combine remaining ingredients and add cooled potatoes.

Mmmmm.. it is a hit.

Bakery Style Chocolate Chip Cookies


This is my favorite recipe. The whole thing yeilds 12 big cookies!! And they are super delicious! I promise.


Ingredients

2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
2 cups semisweet chocolate chips

Directions

1.Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets or line with parchment paper.
2. Sift together the flour, baking soda and salt; set aside.
3. In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the vanilla, egg, and egg yolk until light and creamy. Mix in the sifted ingredients until just blended. Stir in the chocolate chips by hand using a wooden spoon. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart.
4. Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
