Hiking .. Kinda

Today Mema and Grandad came down and we decided to take a nature hike "field trip" to look at the leaves changing color. Unfortunately that hadn't happened yet and it was super hot. So we followed my parents their favorite campsite and had a great time in the creek.

Dad wanted to try to float down the most rapid part we could find. Needless to say he had a blast, but came home slightly injured. :)

Me and the booger watching from a safe distance, although he would have swam out to Dad if we would have let him.
This kid was awesome and clocked Jeff in the head with a rock as he floated by. Dad was not amused.

Wading into the creek in Super Grover undies! Yes we are potty training and went on a full day's outing with no accidents. Yay me!
Family time was so fun today!

First Day of Autumn



I saw a picture like this in a magazine and decided to give it a try. I'm not the best baker... (ahem.. I have proven that before), but these turned out cute. They are treats for the neighborhood kids.

Turkey Focaccia w/ Cranberry Mayo

Jeff suggested I take a picture of this sandwich before we ate it because it looked so good.

He finished it saying it was the best sandwich he had ever eaten!

(That is a large dinner plate that this sandwich is sitting on, so it was a big one. I had a wedge, Jeff ate that half! )

Cranberry Mayo

1/2 cup mayonnaise
1/2 cup whole berry cranberry sauce
2 teaspoons Dijon mustard
2 teaspoons chopped pecans
1 tablespoon honey

Sandwich

1 loaf focaccia bread (this one was from Panera Bread.. mmmm)
3 lettuce leaves
1/2 lb thinly-sliced cooked turkey
1/4 lb gouda cheese, sliced
8 slices tomatoes
6 bacon, strips cooked

  • In small bowl, combine mayonnaise, cranberry sauce, mustard, pecans and honey.
  • Cut bread in half horizontally, then spread both sides with cranberry pecan mayonnaise.
  • Layer with lettuce, turkey cheese, tomato and bacon.
  • Replace bread top and cut into wedges

My Days...

Well, school started last month and both L and J are gone for most of the day. So my afternoons are spent with this little monster man. I love him so much :)
